Eating Savory

The Ultimate Guacamole Recipe

May 5, 2011

Guacamole is one of my all-time favorite things to eat. Not only is it great with chips and salsa, it’s the perfect topping on a burger. Now that I think of it guacamole is also good on its own. With just a spoon and a smile.

For all you guacamole lovers, this is a recipe I swear by. Β Hope you enjoy. And yes I did just say guacamole, repeatedly.

Guacamole.

Ingredients

Homemade Guacamole
Ingredients
1 jalapeno pepper Β – seeded and minced
1 teaspoon sea salt
1 tablespoon finely chopped cilantro
3 tablespoons chopped tomato
2 tablespoons onions minced
1 large avocado, ripe
1/2 lime

Begin by mincing the jalapeno. I start by chopping it, getting rid of the seeds and then mincing it. Β Once complete finely chop the cilantro and then mix jalapeno and cilantro together, sprinkle with salt to get the natural juice out and mash into a paste. I either do this right on the cutting board or using a mortar and pestle.

Before/After to demonstrate just how easily it mashes into paste.
You can also do this with the bottom side of a spoon on your cutting board.
Transfer the paste to your guacamole serving dish.
Next chop tomato making sure to get rid of all seeds and juice. Β The last thing you want is watery guacamole. Β Not good.Β I chop my tomato pieces into cubes because I like a chunkier guacamole – the goal is to have a finished product that is not going to turn to mush when you mix it. Β Once you’ve chopped your tomato and minced your onion transfer those to the serving dish as well.

Lightly mix the three ingredients together
From here take the avocado, cut it in half and remove the pit. Β Because I do not over mix my guacamole I cut the avocado into cubes from the inside and then scoop them out with a spoon. Β Much easier than peeling, cutting and transferring – and lessens the mush factor.

From here all you have to do is gently toss the avocado with the other ingredients,
squeeze on the lime, lightly mix again and it’s ready to be eaten.

Completed Product
Hope you guys have a great Cinco de Mayo!

i feel you on the procrastinating to work out. I wake up an hour early everyday to work out and probably only end up actually doing 2 out of the 5 days.

I mince therefore I am? or something. hehe

ps- Lyddie that IS garlic in the picture up top. I use my garlic press and squeeze in one clove just prior to adding the lime. Not everyone likes that, but my fave authentic Mexican place does this and it’s pretty darn good.

  • Reply saltandpine May 5, 2011 at 5:47 pm

So yummy looking!! I’d polish that bowl off in about 5 minutes. (Guacamole is a major weakness of mine, hence the 30 day shred.) And side note: Seriously impressive mincing skills displayed in the photos!

I really love Guacamole, when I make it I keep it really simple, just salt, pepper, garlic and lemon (because I never remember to buy limes).

But if you swear by this, I’ll have to try it!

In your first photo, I see some garlic, don’t I? Is it just there for decoration? Because I didn’t see the part where it goes in (unless I’m just reading too fast to get to the good part. If I could only eat it though the computer screen…)

  • Reply Jessica May 5, 2011 at 11:51 am

Delicious and easy – my kind of recipe! I’ll have to convince “the boy” to make margaritas with me tonight in honor of the holiday.

I’m glad to hear you’re still on the Shred – and super impressed. I went for a bike ride last night with “the boy” – first time on a bike in darn near 15 years! 7 miles too! My rear end hurts today from the seat. Sigh.
